Beef Barley Soup

 

Beef Barley is a hearty soup that has become a Port family favorite, especially as the crisp air of autumn nips the air or we are settling in for an afternoon of watching the birds populate the bird feeder while the fire blazes in the fireplace and the football or basketball play-offs are on in the winter. It also warms frozen farmers who have spent the day making sure that the cattle are comfortable as the temperature plunges. Whatever your favorite activities, you will find that this soup is very tasty and surprisingly simple to make.

 

1 pound Clarion Farms ground beef

½ cup chopped onion

1 clove garlic, minced

7 cups water

1 14 ½-oz. can unsalted whole tomatoes, undrained, cut into pieces

½ cup medium Quaker barley, uncooked

½ cup sliced celery

½ cup sliced carrots

2 beef bouillon cubes

½ teaspoon dried basil, crushed

1 bay leaf

1 9-oz. package frozen mixed vegetables

 

In a 4 quart sauce pan or Dutch oven, brown beef. Add onion and garlic; cook until onion is tender. Drain. Stir in remaining ingredients except frozen vegetables. Cover; bring to a boil. Reduce heat; simmer 50 or 60 minutes, stirring occasionally. Add frozen vegetables; cook about 10 minutes until vegetables are tender. Additional water may be added if soup becomes too thick upon standing. YIELD: 12 one cup servings  —Enjoy!
