minty snap peas


These minty peas are a great fresh side for any Springtime meal. The natural sweetness of the snap peas with the cool herbal mint pairs wonderfully with a fatty cut of meat, such as Leg of Lamb.


  • 12 Ounces Snap Peas

  • 1 Tablespoons Olive Oil

  • 2 Tablespoons Butter

  • 3 Tablespoons Fresh Mint, Chopped

  • Kosher Salt and Freshly Ground Black Pepper

Yield: Serves 4

Preparing The Meal

In a medium pan heat olive oil over medium-high heat until shimmering. Add the peas and cook for 3 minutes, making sure to stir occasionally to prevent burning. Add the butter and half of the mint. Stir to combine the mint and cook until the butter has melted. Transfer the peas to a bowl. Season with salt and pepper and the remaining mint. Serve immediately.
