There isn’t a food source that’s been more simplified than beef. Thus, the greatest potential for a food revolution lies in the chucks, ribs, loins, and rumps of beef cattle across the country.

Imagine, as I do, a trip to the farm: “We’re having guests over for a tasting.  I’ll take a t-bone from the 2 year old grassfed Canadienne heifer, another from the yearling Holstein/Angus cross steer that was fattened on corn, and one more from the six year old Devon cow raised on grass and fattened on barley for a summer.”  This is the stuff I dream about.

A person could have a darn good weekend by visiting each restaurant that buys beef from our farm. In fact, that could be a mini-vacation: catch a few shows and cruise around Pittsburgh with the intent of visiting and appreciating every establishment that serves Clarion Farms Beef on their menu.

June 24-26, 2019

Each time the boom on their front-end loader is lowered from a heightened dumping position, the depressurized hydraulic fluid rushing back to the reservoir makes a wailing sound not unlike a cow experiencing serious distress.  Frequently my focus has been snapped away from other tasks as my ears register the sound and my entire body tenses into fight mode, prepared to speed across the farm and aide a member of the herd.
